Karen's Granola Recipe

Needed
  2 large mixing bowls
  2 half-sheet pans
  1 cup, 1/2 cup, and teaspoon measures
  Large spoon and spatula
  Immersion blender with bowl
  Oats, sliced almonds, pecans, raisins, coconut oil, vanilla, cinammon, maple syrup, salt
  Parchment paper

Prep
Pre-heat oven to 325°
Line pans with parchment paper

Mixing
In each bowl, put 4 cups of oats
From each bowl, take 1 full handfull of oats, grind them to flour with the immersion blender, and put them back in bowl
Into each bowl, put:
  • 1 cup broken pecans
  • 1 big handfull of sliced almonds
  • 1 tsp salt
  • 1 tsp vanilla
  • 1/2 cup coconut oil
  • 1/2 cup maple syrup
Mix until evenly moistened
Spoon oats into pans, evenly flat and filling the corners

In the Oven
Cook 10 minutes, then swap trays and rotate back-to-front
Cook 10 minutes, then remove trays, mix, respread, and press down (this will make desirable clumps)
Cook 10 minutes, then swap trays and rotate back-to-front
Cook 10 minutes, then remove and let cool

Finish
Lift the parchment paper and pour granola into the bowl without disturbing the clumps
Add raisins as desired
Mix thoroughly
